Grilled Fish Tostadas

This happened for dinner. Party in my mouth! :)

Grill tilapia filets over medium high heat after seasoning with salt and chili powder (on both sides).

On a small bowl, mix 1 cup of sour cream and 1/2 a cup of mayo with juice from 1/2 a lime, 1 teaspoon of cumin, 1/4 teaspoon of garlic powder and chopped cilantro to taste. Set aside.

Prepare some veggies to go on top:

Cabbage, chopped
Tomato, diced
Fresh corn cut straight from the ear
Lime wedges

Fry corn tortillas in a small pan with enough oil to immerse the tortillas. Fry for about 1-2 minutes on each side.


Spread the sour cream mixture over tortilla and top with coarsely chopped fish, veggies and a squeeze of lime.
